Hi there! My name is Mimsy and this website is an effort to share my experiences with eating clean as well as my own personal health journey. I like to describe myself as a recipe developer, aspiring blogger & food photographer, health & wellness fanatic, a clean eats meal planner and a life enthusiast. Oh yeah, and I’ve been doing marketing and advertising for almost 13 years, and have a passion for that too!
Overall though, I love to cook! In fact if anyone asks what I’m passionate about, I tell them right away it’s cooking and creating new healthy recipes. I also hardly ever cook the same thing twice because I always change something up with the ingredients!
I love cooking so much that I may be slightly obsessed! I’ve always been fascinated with taking something raw and turning it into something magnificent. I remember being 5 or 6 years old begging my mom to help her in the kitchen. For the next five years she let me peel carrots and take the husks off of corn. And the few times she baked (which wasn’t often at all), she would let me stir the ingredients and of course lick the spoon. My mom was afraid of me burning myself on the stove or cutting myself with a knife so she gave me the simple tasks, aka the ones she didn’t want to do! But she always explained her techniques to me as she was cooking and why she would do what she did. Like why she always put basil in her sauces. It was a great natural sweetener without using sugar. I actually thought of that the other day as I was making a quick tomato sauce and kept on thinking it tasted too acidic. It took me a moment to remember that although I added dry seasonings, I forgot the fresh basil! So I quickly chopped some up and low and behold it’s what the sauce was missing.
Around age 11 I was allowed to start cooking simple things on the stove, with my mom’s supervision of course. My favorite was scrambling eggs probably because it was so easy and I’ve always loved eggs. By the time I was 14, I was cooking full course meals. That came in handy because by that point my parents were divorced and since both worked, no matter who’s house I was at, if I wanted dinner before 8pm I needed to cook for myself. They loved it because there would be a wonderful meal when they got home after a long day. I loved it too because I loved to cook and come up with new creations.
Now it’s 21 years later and at the age of 35 I’m still in love with cooking. I’ve learned a lot since then, yet I’m still learning new techniques and new ways to combine food. In fact, one technique I’m still trying to figure out is chopping an onion. It’s so basic, yet takes me forever to do it! I am improving, but only chopping up a half of an onion compared to a whole one seems a lot easier for some reason. Things that make you go hmmm…. Great now I have that song stuck in my head!
Which now leads to today, and my start of a clean eating food blog. I want to share my experiences of great new recipes that I create (or others adapted from other great food bloggers) and how my boyfriend, Jeff, and I are living clean health journeys.
