This last week has been a slow one for me when it comes to posting, although it seems like the week went by really fast! Spring Forward really messed up my sleep schedule on Sunday night giving me complete insomnia, so I wound up sleeping for 3 hours Monday afternoon. Then I was still catching up on sleep on Tuesday with another 3 hour nap, so finally yesterday I was all caught up. In the meantime, Jeff has been sick with a bad cold, and I have 2 new job opportunities that I’m really excited about. I have a meeting on Monday for one of them, and an interview where I’ll be giving a huge 20 minute presentation for the other one. Since both are early in the works, I won’t go into too much detail yet, but I’m excited about them both!
I am so happy that there are only 9 more days left of winter, and it’s already warming up in Kansas City. In fact, it’s been in the upper 60s this whole week, and today it’s made it to 73 degrees, sunny and not a cloud in the sky. I’m even sitting outside while I’m writing this post. I’m going to take advantage of this as long as I can, because even though it’s beautiful now, Kansas City weather is so erratic and it could still snow in the beginning of April. One thing I would not wish for for is spring 2 years ago when it snowed on May 2nd. That was a total fluke, but it can happen, so I’ll enjoy today’s 73 degree weather for as long as I can! Chicken drumsticks are a comfort food to me. It reminds me of my childhood because I ate them all the time. My mom usually seasoned and baked a bunch for the week, and it would be warm for dinner and cold for lunch. For those food photographers out there, have you ever noticed how hard it is to photograph meatballs? Like seriously… here are these tiny little balls (that’s what she said!) and you first have to try to get them to not roll around on the plate. Then, they’re this drab brown that desperately needs color to make the food look appetizing through a picture. So, as I’m learning more and more about the art of taking photos, I’m really hoping that I was able to add enough color to the pictures to make the meatballs look tasty, because OMG these were delicious! Yesterday was the perfect day to do my weekly #FoodPrepSunday. It had snowed a lot the day before, so it was a perfect day to stay inside and heat up the kitchen with the stove and oven! Thankfully the sun did come out, which helped with shoveling, and it gave me some great natural light in the kitchen for photos. Plus, I prefer natural light so much more than using a lamp or overhead lighting because it keeps me happy and awake!

Breakfast and brunch have always been my two favorite meals of the day. I don’t know why. I’ve always been a protein for breakfast kind of person too. And a savory protein. The idea of having only something sweet for breakfast or brunch does not appeal to me one bit. Maybe it’s because my mom wouldn’t allow me to have the sugary cereals as a kid? I don’t know. Now don’t get me wrong, I love pancakes, waffles, donuts, danishes, cereal, etc. but I usually want those items in the evening for some reason. Probably because in college my friends and I would always do the late night Denny’s run after a night of partying, because pancakes drenched at 2am is soooooooooooo good 😉 Although now that I think about it, a lot of times the after party would be at my place and I’d wind up making omelettes with hash browns and bacon for everyone. Or I would wind up taking over someone else’s kitchen and cook everyone breakfast at 2am. Oh, those were the days!
This is the shake I talked about overflowing in my last Food Prep Sunday post. It wasn’t an epic fail to say the least, but it kind of shocked me at first. I semi-screamed when it spilled all over, and Jeff came running in from the living room thinking something happened to me. I think he was a little disappointed when he realized it wasn’t a big catastrophe and he wasn’t able to save the day. At least he offered to help clean it up!

Before I met my boyfriend two years ago, I was a single gal always on the move and definitely did not have time for Food Prep Sundays. I still cooked for myself, but maybe only 3 or 4 times per week. The rest of the time was eating a bowl of cereal or going out with friends for dinner. Oy to think of all the money I spent on those dinners and drinks! Breakfasts were either from Starbucks or a frozen Jimmy Dean breakfast sandwich, and lunches were almost ALWAYS from the frozen food aisle and had the words, “Healthy Choice” or “Lean Cuisine” on the box it came from. I thought I was eating healthy because these items would say “healthy” or “Light” or “Fat-Free” or “Low Calorie”… you get the picture. Before I began eating clean I loved to go to this one Mexican restaurant and get their enchiladas (with a margarita of course!). It was more of a Mexican fusion place that always added something extra to the traditional dish, and they added black beans and corn to their enchiladas. It was brilliant! Today is the first day of a new series I’m going to start doing: Food Prep Sunday. Every Sunday I take a few hours and cook and prep all of Jeff and my meals for the week. I’ve already been taking photos and uploading some of them to Instagram (@yummyinmycleantummy), so I decided that I should actually be writing about this and sharing it with you all!
This week’s food prep was an interesting one. First, I started almost 2 hours after I originally planned on starting the day. For the first time in awhile, Jeff and I actually slept in on a Sunday.
