This last week has been a slow one for me when it comes to posting, although it seems like the week went by really fast! Spring Forward really messed up my sleep schedule on Sunday night giving me complete insomnia, so I wound up sleeping for 3 hours Monday afternoon. Then I was still catching up on sleep on Tuesday with another 3 hour nap, so finally yesterday I was all caught up. In the meantime, Jeff has been sick with a bad cold, and I have 2 new job opportunities that I’m really excited about. I have a meeting on Monday for one of them, and an interview where I’ll be giving a huge 20 minute presentation for the other one. Since both are early in the works, I won’t go into too much detail yet, but I’m excited about them both!
Breakfast and brunch have always been my two favorite meals of the day. I don’t know why. I’ve always been a protein for breakfast kind of person too. And a savory protein. The idea of having only something sweet for breakfast or brunch does not appeal to me one bit. Maybe it’s because my mom wouldn’t allow me to have the sugary cereals as a kid? I don’t know. Now don’t get me wrong, I love pancakes, waffles, donuts, danishes, cereal, etc. but I usually want those items in the evening for some reason. Probably because in college my friends and I would always do the late night Denny’s run after a night of partying, because pancakes drenched at 2am is soooooooooooo good 😉 Although now that I think about it, a lot of times the after party would be at my place and I’d wind up making omelettes with hash browns and bacon for everyone. Or I would wind up taking over someone else’s kitchen and cook everyone breakfast at 2am. Oh, those were the days!
This is the shake I talked about overflowing in my last Food Prep Sunday post. It wasn’t an epic fail to say the least, but it kind of shocked me at first. I semi-screamed when it spilled all over, and Jeff came running in from the living room thinking something happened to me. I think he was a little disappointed when he realized it wasn’t a big catastrophe and he wasn’t able to save the day. At least he offered to help clean it up!

When shopping at Aldi’s for the week, I was super excited to see frozen peaches, so I had to pick up a bag to try them in one of our shakes. Peaches are probably my favorite fruit of all time, and of course are impossible to find fresh in February. But since I think that frozen fruit works better in shakes, these were perfect!! Jeff’s eyes lit up when I told him this morning that we would be having shakes for breakfast and that there were peaches in them. I love egg bakes! Want to know why? Because not only are they the easiest thing to make, but I can make them on Sunday and then Jeff and I have at least 4 breakfasts a week for both of us ready to go! This way as we’re scrambling to get ready in the morning I don’t have to cook us breakfast and clean up from it! We don’t even have to use a plate because I portion it out into individual containers, so we can heat it up on our own when we’re ready to eat it. Ahhh, the easy meal. I love it! My recipe creativity comes from all of the place. Sometimes I see a recipe or I eat something new and I immediately start thinking of 10 different ways I can re-invent it. Other times it just comes to me, or is a play on something else I’ve previously created.
Well folks, for this recipe my imagination got ahead of me, and I started thinking of all these crazy ideas of what I could do with a meatza. For those of you who do not know, a MEATZA is just like a PIZZA, except it uses meat as it’s crust. Urban Dictionary’s definition is: A low carb craze where traditional pizza crust is replaced with a crust made of ground meat and then topped with traditional pizza toppings.
