I am so happy that there are only 9 more days left of winter, and it’s already warming up in Kansas City.  In fact, it’s been in the upper 60s this whole week, and today it’s made it to 73 degrees, sunny and not a cloud in the sky.  I’m even sitting outside while I’m writing this post.  I’m going to take advantage of this as long as I can, because even though it’s beautiful now, Kansas City weather is so erratic and it could still snow in the beginning of April.  One thing I would not wish for for is spring 2 years ago when it snowed on May 2nd.  That was a total fluke, but it can happen, so I’ll enjoy today’s 73 degree weather for as long as I can!  Continue reading Winter Steak Salad

Before I began eating clean I loved to go to this one Mexican restaurant and get their enchiladas (with a margarita of course!).  It was more of a Mexican fusion place that always added something extra to the traditional dish, and they added black beans and corn to their enchiladas.  It was brilliant!  Unfortunately, that restaurant is out of business now, but it never hurts to try to recreate something you remember!  Continue reading Quinoa Beef Enchilada Casserole

Balsamic Beef Stew with Sweet Potatoes, Rainbow Carrots and Kale

One of my fond memories of winter as a child was the beef stew that my mom would always make.  I can remember she spending the whole day making these huge batches of it, putting it into individual containers, and then freezing them so we would have stew all winter long.  It was tasty, filling and always made my tummy happy.  Well, I’ve decided to update my mom’s stew and add sweet potatoes, rainbow carrots (for some fun color) and Kale (for added nutrition). The balsamic vinegar adds an extra touch of flavor and a scent that makes my mouth water.  It tastes just as good as my mom’s (if not better, but I won’t tell her that!), and definitely is making my clean tummy happy.   Continue reading Balsamic Beef Stew with Sweet Potatoes, Rainbow Carrots and Kale
