We’ve really put ourselves on a food budget lately. A MAJOR food budget. I realized I had been paying close to $200/week for 2 adults. That’s ridiculously high, don’t you think? Especially since I’m in the midst of looking for a new full time job, I still have student loans, and Jeff and I are wanting to not only do some upgrades to the house, but also pay off the house, we realized that we needed to cut out some things. So, I’m on a new quest…. how can I make yummy clean meals, stick to as much organic as I can, and try not to spend more than $100 each week on food? I love egg bakes! Want to know why? Because not only are they the easiest thing to make, but I can make them on Sunday and then Jeff and I have at least 4 breakfasts a week for both of us ready to go! This way as we’re scrambling to get ready in the morning I don’t have to cook us breakfast and clean up from it! We don’t even have to use a plate because I portion it out into individual containers, so we can heat it up on our own when we’re ready to eat it. Ahhh, the easy meal. I love it! Did you know that January is National Soup Month? I didn’t either until today when I looked up wacky national holidays! I’m excited that it’s this month because I love soup! Well, I do now that I make it all the time. In fact, I used to not really like soup because I never thought it filled me up. Well, of course it didn’t! I was eating cans of Progresso and Campbells soup that would be less than 300 calories (because I thought that was healthy), and I could never understand why I would want more right afterwards. My recipe creativity comes from all of the place. Sometimes I see a recipe or I eat something new and I immediately start thinking of 10 different ways I can re-invent it. Other times it just comes to me, or is a play on something else I’ve previously created.
Well folks, for this recipe my imagination got ahead of me, and I started thinking of all these crazy ideas of what I could do with a meatza. For those of you who do not know, a MEATZA is just like a PIZZA, except it uses meat as it’s crust. Urban Dictionary’s definition is: A low carb craze where traditional pizza crust is replaced with a crust made of ground meat and then topped with traditional pizza toppings.
