I am so happy that there are only 9 more days left of winter, and it’s already warming up in Kansas City.  In fact, it’s been in the upper 60s this whole week, and today it’s made it to 73 degrees, sunny and not a cloud in the sky.  I’m even sitting outside while I’m writing this post.  I’m going to take advantage of this as long as I can, because even though it’s beautiful now, Kansas City weather is so erratic and it could still snow in the beginning of April.  One thing I would not wish for for is spring 2 years ago when it snowed on May 2nd.  That was a total fluke, but it can happen, so I’ll enjoy today’s 73 degree weather for as long as I can!  Continue reading Winter Steak Salad

Before I met my boyfriend two years ago, I was a single gal always on the move and definitely did not have time for Food Prep Sundays.  I still cooked for myself, but maybe only 3 or 4 times per week.  The rest of the time was eating a bowl of cereal or going out with friends for dinner. Oy to think of all the money I spent on those dinners and drinks!  Breakfasts were either from Starbucks or a frozen Jimmy Dean breakfast sandwich, and lunches were almost ALWAYS from the frozen food aisle and had the words, “Healthy Choice” or “Lean Cuisine” on the box it came from.  I thought I was eating healthy because these items would say “healthy” or “Light” or “Fat-Free” or “Low Calorie”… you get the picture. This yummy delicious salad is great for a pre-made lunch-to-go.  I typically make these on Sundays, put in plastic containers and into the fridge, and we have lunch for 2 or 3 times that week depending on how much I make. That’s why the serving size is for one so you can multiply it by however many servings you need!

What’s great about it is that it can be served hot or cold depending on your mood, and either way it’s delicious. For this dish, you can use leftover chicken, pasta and broccoli, or make it fresh that day.  This is a must-have healthy lunch!  Continue reading Chicken Caesar Pasta Salad
