Yesterday was the perfect day to do my weekly #FoodPrepSunday.  It had snowed a lot the day before, so it was a perfect day to stay inside and heat up the kitchen with the stove and oven!  Thankfully the sun did come out, which helped with shoveling, and it gave me some great natural light in the kitchen for photos. Plus, I prefer natural light so much more than using a lamp or overhead lighting because it keeps me happy and awake!

Food Prep Sunday – 02.22.15

Today is the first day of a new series I’m going to start doing: Food Prep Sunday.  Every Sunday I take a few hours and cook and prep all of Jeff and my meals for the week. I’ve already been taking photos and uploading some of them to Instagram (@yummyinmycleantummy), so I decided that I should actually be writing about this and sharing it with you all!

This week’s food prep was an interesting one.  First, I started almost 2 hours after I originally planned on starting the day.  For the first time in awhile, Jeff and I actually slept in on a Sunday. We’ve really put ourselves on a food budget lately.  A MAJOR food budget.  I realized I had been paying close to $200/week for 2 adults.  That’s ridiculously high, don’t you think?  Especially since I’m in the midst of looking for a new full time job, I still have student loans, and Jeff and I are wanting to not only do some upgrades to the house, but also pay off the house, we realized that we needed to cut out some things.  So, I’m on a new quest…. how can I make yummy clean meals, stick to as much organic as I can, and try not to spend more than $100 each week on food?  It’s going to be tough, but I accept this challenge!  Continue reading Bacon, Black Bean and Pumpkin Soup

Chicken Caesar Pasta Salad

This yummy delicious salad is great for a pre-made lunch-to-go.  I typically make these on Sundays, put in plastic containers and into the fridge, and we have lunch for 2 or 3 times that week depending on how much I make. That’s why the serving size is for one so you can multiply it by however many servings you need!

What’s great about it is that it can be served hot or cold depending on your mood, and either way it’s delicious. For this dish, you can use leftover chicken, pasta and broccoli, or make it fresh that day.  This is a must-have healthy lunch!  Continue reading Chicken Caesar Pasta Salad
