This last week has been a slow one for me when it comes to posting, although it seems like the week went by really fast! Spring Forward really messed up my sleep schedule on Sunday night giving me complete insomnia, so I wound up sleeping for 3 hours Monday afternoon. Then I was still catching up on sleep on Tuesday with another 3 hour nap, so finally yesterday I was all caught up. In the meantime, Jeff has been sick with a bad cold, and I have 2 new job opportunities that I’m really excited about. I have a meeting on Monday for one of them, and an interview where I’ll be giving a huge 20 minute presentation for the other one. Since both are early in the works, I won’t go into too much detail yet, but I’m excited about them both!
Chicken drumsticks are a comfort food to me. It reminds me of my childhood because I ate them all the time. My mom usually seasoned and baked a bunch for the week, and it would be warm for dinner and cold for lunch. I was probably one of the few kids that would be sent to elementary school with a big ol’ drumstick in her lunch box. But then again I always had something different to bring with me to lunch. For those food photographers out there, have you ever noticed how hard it is to photograph meatballs? Like seriously… here are these tiny little balls (that’s what she said!) and you first have to try to get them to not roll around on the plate. Then, they’re this drab brown that desperately needs color to make the food look appetizing through a picture. So, as I’m learning more and more about the art of taking photos, I’m really hoping that I was able to add enough color to the pictures to make the meatballs look tasty, because OMG these were delicious! Yesterday was the perfect day to do my weekly #FoodPrepSunday. It had snowed a lot the day before, so it was a perfect day to stay inside and heat up the kitchen with the stove and oven! Thankfully the sun did come out, which helped with shoveling, and it gave me some great natural light in the kitchen for photos. Plus, I prefer natural light so much more than using a lamp or overhead lighting because it keeps me happy and awake!

This is the shake I talked about overflowing in my last Food Prep Sunday post. It wasn’t an epic fail to say the least, but it kind of shocked me at first. I semi-screamed when it spilled all over, and Jeff came running in from the living room thinking something happened to me. I think he was a little disappointed when he realized it wasn’t a big catastrophe and he wasn’t able to save the day. At least he offered to help clean it up!

Today is the first day of a new series I’m going to start doing: Food Prep Sunday. Every Sunday I take a few hours and cook and prep all of Jeff and my meals for the week. I’ve already been taking photos and uploading some of them to Instagram (@yummyinmycleantummy), so I decided that I should actually be writing about this and sharing it with you all!
This week’s food prep was an interesting one. First, I started almost 2 hours after I originally planned on starting the day. For the first time in awhile, Jeff and I actually slept in on a Sunday. When shopping at Aldi’s for the week, I was super excited to see frozen peaches, so I had to pick up a bag to try them in one of our shakes. Peaches are probably my favorite fruit of all time, and of course are impossible to find fresh in February. But since I think that frozen fruit works better in shakes, these were perfect!! Jeff’s eyes lit up when I told him this morning that we would be having shakes for breakfast and that there were peaches in them. We’ve really put ourselves on a food budget lately. A MAJOR food budget. I realized I had been paying close to $200/week for 2 adults. That’s ridiculously high, don’t you think? Especially since I’m in the midst of looking for a new full time job, I still have student loans, and Jeff and I are wanting to not only do some upgrades to the house, but also pay off the house, we realized that we needed to cut out some things. So, I’m on a new quest…. how can I make yummy clean meals, stick to as much organic as I can, and try not to spend more than $100 each week on food?
