Chicken drumsticks are a comfort food to me. It reminds me of my childhood because I ate them all the time. My mom usually seasoned and baked a bunch for the week, and it would be warm for dinner and cold for lunch. Yesterday was the perfect day to do my weekly #FoodPrepSunday. It had snowed a lot the day before, so it was a perfect day to stay inside and heat up the kitchen with the stove and oven! Thankfully the sun did come out, which helped with shoveling, and it gave me some great natural light in the kitchen for photos. Plus, I prefer natural light so much more than using a lamp or overhead lighting because it keeps me happy and awake!

Breakfast and brunch have always been my two favorite meals of the day. I don’t know why. I’ve always been a protein for breakfast kind of person too. And a savory protein. The idea of having only something sweet for breakfast or brunch does not appeal to me one bit. Maybe it’s because my mom wouldn’t allow me to have the sugary cereals as a kid? I don’t know. Now don’t get me wrong, I love pancakes, waffles, donuts, danishes, cereal, etc. but I usually want those items in the evening for some reason. Probably because in college my friends and I would always do the late night Denny’s run after a night of partying, because pancakes drenched at 2am is soooooooooooo good 😉 Although now that I think about it, a lot of times the after party would be at my place and I’d wind up making omelettes with hash browns and bacon for everyone. Or I would wind up taking over someone else’s kitchen and cook everyone breakfast at 2am. Oh, those were the days!
Before I began eating clean I loved to go to this one Mexican restaurant and get their enchiladas (with a margarita of course!). It was more of a Mexican fusion place that always added something extra to the traditional dish, and they added black beans and corn to their enchiladas. It was brilliant! Today is the first day of a new series I’m going to start doing: Food Prep Sunday. Every Sunday I take a few hours and cook and prep all of Jeff and my meals for the week. I’ve already been taking photos and uploading some of them to Instagram (@yummyinmycleantummy), so I decided that I should actually be writing about this and sharing it with you all!
This week’s food prep was an interesting one. First, I started almost 2 hours after I originally planned on starting the day. For the first time in awhile, Jeff and I actually slept in on a Sunday. I love egg bakes! Want to know why? Because not only are they the easiest thing to make, but I can make them on Sunday and then Jeff and I have at least 4 breakfasts a week for both of us ready to go! This way as we’re scrambling to get ready in the morning I don’t have to cook us breakfast and clean up from it! We don’t even have to use a plate because I portion it out into individual containers, so we can heat it up on our own when we’re ready to eat it. Ahhh, the easy meal. I love it! This yummy delicious salad is great for a pre-made lunch-to-go. I typically make these on Sundays, put in plastic containers and into the fridge, and we have lunch for 2 or 3 times that week depending on how much I make. That’s why the serving size is for one so you can multiply it by however many servings you need!
What’s great about it is that it can be served hot or cold depending on your mood, and either way it’s delicious. For this dish, you can use leftover chicken, pasta and broccoli, or make it fresh that day. This is a must-have healthy lunch! Continue reading Chicken Caesar Pasta Salad
Did you know that January is National Soup Month? I didn’t either until today when I looked up wacky national holidays! I’m excited that it’s this month because I love soup! Well, I do now that I make it all the time. In fact, I used to not really like soup because I never thought it filled me up. Well, of course it didn’t! I was eating cans of Progresso and Campbells soup that would be less than 300 calories (because I thought that was healthy), and I could never understand why I would want more right afterwards. Last week I explained that the graphic above shows what I like to call “The Circle of Having a Clean Health Journey”. In this journey there are 4 steps: Mind, Nutrition, Mind (again) and Fitness. Each of these steps repeat themselves by continuing to go around and around the circle. You can start this journey at any time, but remember that this is your new lifestyle; it’s not a quick fix. These are things that you will do every day to continue to make yourself healthy. If you fall off the journey, just remember you can always hop back on. That’s the nice thing about health journeys…they will always take you back!
