Yesterday was the perfect day to do my weekly #FoodPrepSunday.  It had snowed a lot the day before, so it was a perfect day to stay inside and heat up the kitchen with the stove and oven!  Thankfully the sun did come out, which helped with shoveling, and it gave me some great natural light in the kitchen for photos. Plus, I prefer natural light so much more than using a lamp or overhead lighting because it keeps me happy and awake!

Food Prep Sunday – 02.22.15

Today is the first day of a new series I’m going to start doing: Food Prep Sunday.  Every Sunday I take a few hours and cook and prep all of Jeff and my meals for the week. I’ve already been taking photos and uploading some of them to Instagram (@yummyinmycleantummy), so I decided that I should actually be writing about this and sharing it with you all!

This week’s food prep was an interesting one.  First, I started almost 2 hours after I originally planned on starting the day.  For the first time in awhile, Jeff and I actually slept in on a Sunday. I love egg bakes!  Want to know why?  Because not only are they the easiest thing to make, but I can make them on Sunday and then Jeff and I have at least 4 breakfasts a week for both of us ready to go!  This way as we’re scrambling to get ready in the morning I don’t have to cook us breakfast and clean up from it!  We don’t even have to use a plate because I portion it out into individual containers, so we can heat it up on our own when we’re ready to eat it.  Ahhh, the easy meal.  I love it!  Continue reading Sausage, Peppers and Spinach Egg Bake

Last week I explained that the graphic above shows what I like to call “The Circle of Having a Clean Health Journey”. In this journey there are 4 steps: Mind, Nutrition, Mind (again) and Fitness. Each of these steps repeat themselves by continuing to go around and around the circle. You can start this journey at any time, but remember that this is your new lifestyle; it’s not a quick fix. These are things that you will do every day to continue to make yourself healthy. If you fall off the journey, just remember you can always hop back on. That’s the nice thing about health journeys…they will always take you back!
