This last week has been a slow one for me when it comes to posting, although it seems like the week went by really fast!  Spring Forward really messed up my sleep schedule on Sunday night giving me complete insomnia, so I wound up sleeping for 3 hours Monday afternoon.  Then I was still catching up on sleep on Tuesday with another 3 hour nap, so finally yesterday I was all caught up.  In the meantime, Jeff has been sick with a bad cold, and I have 2 new job opportunities that I’m really excited about.  I have a meeting on Monday for one of them, and an interview where I’ll be giving a huge 20 minute presentation for the other one.  Since both are early in the works, I won’t go into too much detail yet, but I’m excited about them both!

I am so happy that there are only 9 more days left of winter, and it’s already warming up in Kansas City.  In fact, it’s been in the upper 60s this whole week, and today it’s made it to 73 degrees, sunny and not a cloud in the sky.  I’m even sitting outside while I’m writing this post.  I’m going to take advantage of this as long as I can, because even though it’s beautiful now, Kansas City weather is so erratic and it could still snow in the beginning of April.  One thing I would not wish for for is spring 2 years ago when it snowed on May 2nd.  That was a total fluke, but it can happen, so I’ll enjoy today’s 73 degree weather for as long as I can!  Continue reading Winter Steak Salad

Breakfast and brunch have always been my two favorite meals of the day.  I don’t know why.  I’ve always been a protein for breakfast kind of person too. And a savory protein. The idea of having only something sweet for breakfast or brunch does not appeal to me one bit.  Maybe it’s because my mom wouldn’t allow me to have the sugary cereals as a kid?  I don’t know.  Now don’t get me wrong, I love pancakes, waffles, donuts, danishes, cereal, etc.  but I usually want those items in the evening for some reason.  Probably because in college my friends and I would always do the late night Denny’s run after a night of partying, because pancakes drenched at 2am is soooooooooooo good 😉  Although now that I think about it, a lot of times the after party would be at my place and I’d wind up making omelettes with hash browns and bacon for everyone.  Or I would wind up taking over someone else’s kitchen and cook everyone breakfast at 2am.  Oh, those were the days!

This is the shake I talked about overflowing in my last Food Prep Sunday post.  It wasn’t an epic fail to say the least, but it kind of shocked me at first.  I semi-screamed when it spilled all over, and Jeff came running in from the living room thinking something happened to me.  I think he was a little disappointed when he realized it wasn’t a big catastrophe and he wasn’t able to save the day.  At least he offered to help clean it up!

Before I met my boyfriend two years ago, I was a single gal always on the move and definitely did not have time for Food Prep Sundays.  I still cooked for myself, but maybe only 3 or 4 times per week.  The rest of the time was eating a bowl of cereal or going out with friends for dinner. Oy to think of all the money I spent on those dinners and drinks!  Breakfasts were either from Starbucks or a frozen Jimmy Dean breakfast sandwich, and lunches were almost ALWAYS from the frozen food aisle and had the words, “Healthy Choice” or “Lean Cuisine” on the box it came from.  I thought I was eating healthy because these items would say “healthy” or “Light” or “Fat-Free” or “Low Calorie”… you get the picture. Before I began eating clean I loved to go to this one Mexican restaurant and get their enchiladas (with a margarita of course!).  It was more of a Mexican fusion place that always added something extra to the traditional dish, and they added black beans and corn to their enchiladas.  It was brilliant!  Unfortunately, that restaurant is out of business now, but it never hurts to try to recreate something you remember!  Continue reading Quinoa Beef Enchilada Casserole

When shopping at Aldi’s for the week, I was super excited to see frozen peaches, so I had to pick up a bag to try them in one of our shakes.  Peaches are probably my favorite fruit of all time, and of course are impossible to find fresh in February.  But since I think that frozen fruit works better in shakes, these were perfect!!  Jeff’s eyes lit up when I told him this morning that we would be having shakes for breakfast and that there were peaches in them.  I think he even drank his before I was done making a shake for myself!  Continue reading Peaches and Cream Protein Shake

We’ve really put ourselves on a food budget lately.  A MAJOR food budget.  I realized I had been paying close to $200/week for 2 adults.  That’s ridiculously high, don’t you think?  Especially since I’m in the midst of looking for a new full time job, I still have student loans, and Jeff and I are wanting to not only do some upgrades to the house, but also pay off the house, we realized that we needed to cut out some things.  So, I’m on a new quest…. how can I make yummy clean meals, stick to as much organic as I can, and try not to spend more than $100 each week on food?  It’s going to be tough, but I accept this challenge!  Continue reading Bacon, Black Bean and Pumpkin Soup

Balsamic Beef Stew with Sweet Potatoes, Rainbow Carrots and Kale

One of my fond memories of winter as a child was the beef stew that my mom would always make.  I can remember she spending the whole day making these huge batches of it, putting it into individual containers, and then freezing them so we would have stew all winter long.  It was tasty, filling and always made my tummy happy.  Well, I’ve decided to update my mom’s stew and add sweet potatoes, rainbow carrots (for some fun color) and Kale (for added nutrition). The balsamic vinegar adds an extra touch of flavor and a scent that makes my mouth water.  It tastes just as good as my mom’s (if not better, but I won’t tell her that!), and definitely is making my clean tummy happy.   Continue reading Balsamic Beef Stew with Sweet Potatoes, Rainbow Carrots and Kale
